  1. Dice the carrot, potato, and zucchini.

     
  2. Finely chop the parsley.

     

Steaming Method

  1. Pre-cook the rice in a small saucepan with 1/2 cup of water for 10 minutes.
  2. Place the prepared vegetables in a steaming basket.

  3. Add the pre-cooked rice on top of the vegetables and drizzle with 1 teaspoon of olive oil.

     
  4. Steam the vegetables until they become tender, about 20 minutes.

     
  5. Mash 2-3 spoonfuls of the steamed vegetables with the pre-cooked rice using a fork to make a puree.

Stovetop Method
